Making Fried Pizza: A Delightful Culinary Experience

Hello everyone! Today, I want to share with you a special culinary experience that brings back so many fond memories: watching my mom prepare delicious fried pizzette (little pizzas). Some of you might remember a similar post I wrote about my mom's spaghetti al pomodoro. Just like that dish, these pizzette are made with love and care, creating a meal that’s both comforting and incredibly flavorful.
The dough, which has been resting and rising, is rolled out into small, round discs. Each disc is carefully fried until it’s golden and crispy on the outside, yet soft and airy on the inside. The smell of the dough frying is simply irresistible, filling the kitchen with a warm, comforting aroma.
My mom starts with a simple yet perfect tomato sauce. She uses ripe tomatoes, cooked down with a hint of salt, until they reach a rich and flavorful consistency.
Next comes the cheese. My mom always insists on using the best ingredients, and for these pizzette. She uses Parmigiano Reggiano. The Parmigiano is freshly grated, adding a nutty, salty depth.
Fresh basil leaves are added for that extra burst of freshness, and the sauce is set aside to cool. Then comes the fantastic mozzarella di bufala, with its creamy texture and mild flavor, melts beautifully over the sauce.
Then, they’re popped into the oven for a few minutes, just long enough for the cheese to melt and everything to come together perfectly.
